Chef Didier Clément, at the helm of the Michelin-starred restaurant Le Lion d’Or 1774, embodies a culinary style firmly rooted in the Sologne and Loire Valley regions. Trained under some of the biggest names in French gastronomy, he has developed an approach in which respect for local ingredients takes precedence above all else. His close relationships with local producers—including market gardeners, livestock farmers, and winemakers—allow him to source the finest ingredients for dishes that celebrate the richness of our region.
